7 ripe, juicy, organic, peeled, seeded and chopped Roma or plum tomatoes
1 large white onion (Spanish, if you can, of course!)
1 red bell pepper
2 cloves of garlic
2 ripe cucumbers
Himalayan salt
Fresh ground pepper
Juice of 1 Lemon
One third cup of Virgin Olive Oil
1 teaspoon of Balsamic Vinegar

Method
Reserve and finely chop a little of the red pepper, onion and cucumber for final decoration

Pour the olive oil and lemon juice into the blender
Add the rest of the chopped vegetables
Blend until deliciously creamy
Taste and adjust flavourings as desired
Serve well chilled
Sprinkle with the reserved finely chopped tomatoes, onion and cucumber for decoration
