Winter Warming Soup

A pound of potatoes, 2 onions, 2 leeks, 3 cloves of garlic, small head of cauliflower, 4 sprigs of parsley, a dash of Himalayan pink salt. 

Chop all the vegetables into half inch size chunks,

Simmer gently in water in a large saucepan for two hours

Blend until smooth and creamy, and serve.

Delicious, hearty, nutritious, such a comfort to come home to on a cold night!
