Felicity’s Gerson Soup (as organic as you can make it!)

1 pound of potatoes

2 medium onions

1 lb tomatoes

1 lb young farm fresh carrots

2 small leeks

Celery root (or 4 sticks of celery)

1 parsley root

Garlic for flavour (I use lots!)

Use a large, heavy saucepan (glass is cleanest)

Cover the vegetables with distilled water

Method

Do not peel any of these vegetables, just scrub and chop coarsely.   Simmer for 2 hours, then blend.  Add more distilled water if you wish a finer consistency.   Drink as much as you need for warming, nutrient filled lunches and suppers.   This soup is going to give you the nutrients to rebuild your immune system.

The soup can be covered, stored in the refrigerator, and heated again for the following day.   Drink within 48 hours.  I lived on this soup for months, as a hot meal in addition to my juices while I was healing in 2003.   It is still my staple vegetable soup.    I sometimes add different herbs like basil, or maybe curcumin, cumin and turmeric to give a mild curry flavour which I love,  providing a natural cancer fighting agent.
